I bought a 1959 thompson Sea Coaster and I am looking into restoring it. The hull is covered in fiberglass. The lapstrake is visible from the inside. My question is, was the fiberglass normal or did someone add this?

Hello and welcome. If this is a boat made by any of the Thompson firms, NO the fiberglass was not a factory item. It was added by a previous owner.
